I am a potato girl, through and through. It is always a staple that we have in our household, as it is one of the most abundant Peruvian staples. In fact, Peru has over 4000 different varieties of potatoes (also known as tubers).

So of course for holiday events, I like to make the mashed potatoes in the way I know best. With Bacon. And no, I don’t shy away from bacon, because I look for high quality cuts in the grocery store or from Force of Nature!

I made mashed potatoes all of the time during pregnancy because I would have super intense cravings for them. Potatoes are exceptionally high in potassium, so I always wonder if it was an innate calling in my body that I needed some extra potassium during the trimesters.

Ingredients

  • 8 potatoes
  • 5 bacon strips
  • 3 tbsp bacon fat
  • Bunch of parsley
  • Bunch of Rosemary
  • Salt
  • 3 garlic cloves
  • Splash of coconut milk (or raw milk)

If you want to skip the bacon, you can of course make the mashed potatoes with butter and herbs.

Preparation

The potatoes: First I boil the potatoes in water and salt for 15-20 minutes, depending on the size of the potatoes. Stick a fork through the potatoes to determine softness for mashing.

The bacon: Cook the bacon in a pan at medium heat or in the oven at 400F to the crispness you like! Save the fat for the potatoes.

  • Throw the potatoes in a bowl and begin to mash them with a fork or whisk. (If you don’t want to do it manually you can use a mixer).
  • Chop the rosemary into fine pieces
  • Chop the parsley into fine pieces
  • Add the herbs to the potatoes
  • Add 4 tbsp of bacon fat
  • Pour ¼ cup of coconut milk into mix
  • Continue to mix until your consistency is creamy
  • Add salt in as you mix, salt until you find the right balance
  • If you need to add more fat or coconut milk, do so!

And voila, you have the best mashed potatoes🤤I love this recipe because it is such a homey staple for everyday life or the holidays with family. You can play around with substituting herbs and other fats like butter!
