When I was in NYC I was always desperate for warmer weather, which led me to my papaya boat craze.
I would go grab a couple of papayas at Whole Foods, and each morning for breakfast I would take some chia pudding I had made from the fridge and stuff it in half of a papaya.
There’s nothing that satiates me better than a fresh fruit dish in the morning to pair with some protein and coffee (I never forget the protein).
Ingredients
- ½ Papaya, seeds scraped
- 4 tbsp chia seeds
- 1 cup coconut milk
- Cinnamon
- Pumpkin seeds (magnesium)
- Handful of cacao nibs (copper)
- Handful of goji berries (vitamin A &C)
- Local honey (nature’s antibiotic)
These were the ingredients I loved to top on the papaya boat because they added a nice crunch. Some people love fruit and would want to add more fruit on top, but for me a savory crunch and the papaya with honey is just enough!
Preparation
Chia Pudding: Simply take a cup of coconut milk and toss 4 tbsp of chia seeds in and stir. Add a couple of sprinkles of cinnamon. Store in the fridge overnight.
In the Morning: Take your papaya out and cut it in half, discarding or storing the seeds elsewhere. Take a knife and slice vertically across the papaya and follow it up with horizontal cuts. NOTE: Do not cut through the skin! Keep the papaya intact on the outside.
Pour the chia seed pudding in the center of the papaya and sprinkle your goji berries, cacao nibs, and honey on top to finish it off. Use a spoon to cut through the papaya and enjoy!
